Sweet and Sour Cajun Style Chicken A.K.A. Candy Chicken
Description:
This is a very easy stir-fry to make. Takes about 30 to 40 minutes. My kids really enjoy this one and I'm sure you will too.
Ingredients:
1 cup
white rice
3
chicken breasts
1
bell pepper
1
large onion
1 small can
pineapple chunks
1 small jar
marcello cherries
to taste
salt
to taste
pepper
1 bottle
sweet and sour sauce
1 tablespoon
olive oil
Steps:

First I like to get the rice started.

Next chop the pepper and onion into strips and put them off to the side until needed.

While your wok is warming up, cube your chicken breast, roughly into half inch cubes. Coat your wok with olive oil, place chicken in wok, salt and pepper, and turn heat up to high. Be sure to move and flip the chicken around. They don't call it stir-fry for nothing. If chicken begins to make juice, push the chicken up the sides of the wok and allow the juice to boil off. Do Not let you chicken sit in it's own juice or It will become rubbery.

Once chicken is a golden brown, add your bell pepper and onion. Salt and pepper again. Stir-fry for a few minutes, then add pineapple chunks and cherries. After a few more minutes add sweet and sour sauce and reduce heat to low. Simmer for about 5 minutes stirring occasionally.

Place rice in the middle of your plates and top it with the Candy Chicken. Simple as that.
