Sausage and Peppers Sandwich


One of my personal favorites.


1 large pack Sausage (Sweet or Hot)
1/4 cup give or take Vegetable Oil
2 Bell Peppers
1 large Onion
to taste Salt
to taste Pepper
6-8 Italian Torpedo Rolls


1. Make a good Marinara Sauce to go with your Sausage and Peppers. You can find one in my cookbook.
2. Warm oil in a large pot. I like to use a large pot so the oil does not spatter all over my stove top. Once oil is hot, brown your sausage on all sides.
3. After sausage is cooked, remove sausage from pot and drain oil, leaving about a table spoon. Return pot to heat and add peppers, onion, salt, pepper, and sausage to pot. Do not overcook your veggies. You want them to stay nice and crisp.
4. Once veggies are crisp, pour marinara sauce in your large pot with the sausage and let simmer for about 10 minutes. Serve on rolls.
