Crab Newberg Dip
Ingredients:
4 cups
diced artificial or real crab
2 tablespoons
sherry
2 cups
half and half
4
egg yolks, beaten
1/2 teaspoon
salt
to taste
paprika
2 cups
shredded colby jack cheese
1 bag
tortilla chips
Steps:

Melt butter in the bottom of a medium sauce pan, add flour and stir. Cook for 1 minute. Whisk in half and half. Cook over medium heat until the white sauce begins to thicken. Remove from heat and slowly add small amounts of sauce to egg yolks as you whisk the eggs. When you've added about 1/4 of the sauce to the eggs, return the remaining sauce to the heat and add egg mixture to sauce while whisking quickly. Add sherry, lemon juice and seasonings. Cook over medium heat until well thickened. Add crab and remove from heat. Pour half of the half of the dip into an 8 x 8 casserole dish, top with one cup of cheese, repeat.

Bake at 375˚ for 10-15 minutes or unil heated through and bubbly.
